Nach <em>Tagliatelle mit Shi Take<\/em> und <em>Fettuccine Gorgonzola<\/em> hatte ich die Nudelmaschine gestern innerhalb einer Woche schon zum dritten Mal im Einsatz: dieses Mal hab ich mich f\u00fcr einen Nudelteig mit Ei und einem Zusatz &#8211; hier Tomatenmark &#8211; entschieden. Die Italiener essen sie in der Regel auch nicht zu Spaghetti. Fettuccine oder Tagliatelle sind besser geeignet, weil sie nicht so glatt sind und an ihnen die So\u00dfe besser h\u00e4ngen bleibt. Eine 3 &#8211; 4 Stunden gekochte Bolognese-So\u00dfe, die nichts mit der in 30 Minuten angefertigten Schnellvariante zu tun hat.<\/p>\n<p><strong>Zutaten f\u00fcr 4 Personen:<\/strong><\/p>\n<p>500 g Rinderhackfleisch<br \/>\n100 g <a href=\"https:\/\/de.wikipedia.org\/wiki\/Pancetta\">Pancetta<\/a> (oder Schinkelw\u00fcrfel)<br \/>\n1 M\u00f6hre<br \/>\n2 Stangen Sellerie<br \/>\n6 Tomaten<br \/>\n3-4 Knoblauchzehen<br \/>\n1 gr. (oder 2 kl.) Zwiebel(n)<br \/>\n300-500 ml Gem\u00fcsebr\u00fche (am besten selbst gemacht, s. <a href=\"https:\/\/textundblog.de\/?p=8136\">Rezept<\/a>)<br \/>\n150-200 ml Rotwein<br \/>\n1 P\u00e4ckchen passierte Tomaten<br \/>\nAn Gew\u00fcrzen:<br \/>\nCurry, rotes Chilipulver, gemahlener schwarzer Pfeffer, Salz und Zimt<\/p>\n<p>So, nun kann&#8217;s los gehen. Lasst uns die Bolognese zubereiten. Dann das Rinderhack dazugeben und kurz anbraten. Die klein gew\u00fcrfelten Zwiebeln und den gehackten Knoblauch dazu geben und kurz mit anbraten.
